This morning, I was craving for some bran muffins....So I went to my pantry and decided to make my favorite ones. These are so delicious, you can't just have one....Below is the recipe:
In a large mix bowl, beat 4 eggs along with 2 cups sugar. Add 1 cup canola oil, mix well. In separate bowl, mix 5 cups flour, 1 teas. salt, 5 teas. baking soda. Mix well. Slowly add the flour mixture into the egg mixture. Blend in 1 (15 oz. Raisin Bran Cereal) along with 1 quart of buttermilk. Stir until well mixed.
Add to muffin tins and bake at 400 degrees for 10-12 minutes. These are good warm or at room temperature. Recipe recommends serving with apple butter but I eat my plain and they are yummy!!!
Store batter into sealed containers for up to six weeks.
